Intense sorting prior to partial destemming with 20-30% selective whole bunch components. Open top natural fermentation. One daily punch-down and prolonged post-ferment skin contact under CO2 protection.

An uncompromising dry Cap Classique in style, this 100% Chardonnay has been on the lees for 100 months, patiently waiting for you to come along. Cap Classique in its purest form.
The Teal stripe is a tribute to Tiffany’s pure elegance and style.
Aggressive in style, there is nothing sweet about this baby, with just 1.4 g/l of residual sugar.
Tasting Notes
Zero Dosage represents Methode Cap Classique in its purest form, allowing the grape, site, and vintage to shine. Bright yellow with a green hue, the nose invites a vibrant bouquet of peach, almonds and exotic spice. The palate shows stone fruits, hints of brioche and lingering mousse. NB. THIS IS NOT A ZERO ALCOHOL WINE!

Albert Ahrens Kwarts van Die Paarl
Intense sorting of each bunch is crucial. Pressed in our old basket press and transferred to older French barrels (various sizes) after a rough settling overnight.
No enzymes or any other additive is used. Temperature controlled natural fermentation and maturation continues in the same barrels for ±10 months on primary lees with no battonage.
The components are blended to best possible balance and bottled with a small addition of sulphur dioxide.

Scions of Sinai Feniks Pinotage
A unique old Pinotage single vineyard that was planted in 1976. Dry-farmed bushvines rooted in coarse sandy decomposed granite soils high in silica. This also happens to be South Africa’s closest Pinotage to the Ocean. At the foot of Sinai Hill, southern Stellenbosch. Low-yielding vines with uniquely small grape clusters.
